Perfect Oven Salmon (Recipe)

Hello Again!

I hope you all have been enjoying the weather this past weekend as much as I have. I wanted to share one of my favorite and most reliable recipes. I found this salmon recipes many moons ago on Pinterest and have adapted it to my own needs over the years as well as creating my own variations. I hope you enjoy this super easy recipe (which is is super easy to clean up as well!). Enjoy!

 

Main Recipe

Ingredients

  • 1- 1¼ lb. salmon (I usually get 3-4 fillets out of this)

  • 2 Tbsp. olive oil

  • 2 Tbsp. Coastal Blend Seasoning Mix from The Spice and Tea Exchange (link below)

  • Salt and pepper, to taste

  • 1- 2 lemons (depends on how many fillets I get)

  • Lemon juice

  • Aluminium oil

Instructions

1. Preheat the oven to 350F. I start by slicing my salmon into evenly sized fillets (if you are working with salmon that has already been cut and portioned, skip this part).

2. Pull out 3-4 pieces of aluminum foil, about 3/4 of the size of the baking sheet that the salmon will be cooked on. Cut the lemons into slices, about a 1/2" thick.

3. Place 2 lemon slices next to each other in the middle of one of the aluminium foil sheets. Place the salmon fillet on top of it. Drizzle 1/2 Tbsp. olive oil onto the top of the fillet. Sprinkle about 1/2 Tbsp. of the Coastal seasoning onto the salmon as well as the salt and pepper making sure it's even. Spritz a little bit of lemon juice on top of the fillet as well.

4. Wrap the aluminum foil so the salmon is encased but not so tight that the aluminium foil is touching the salmon on top. Leave room for the juices to rise and baste the salmon. Place on the baking sheet next to each other.

5. Cook for 30 minutes. Remove the salmon from the foil and serve. The juices from the foil can be poured on top as a delicious sauce.

Variations

Asian Style

Ingredients

  • 2 Tbsp. Sesame oil

  • 1/2 C. Oyster sauce

  • 2 Tbsp. Mirin

  • 4 Tbsp. Soy sauce

  • 2 Tbsp. Brown sugar

  • Salt and pepper, to taste

  • 1 Tbsp. Ginger

  • Garnish: sesame seeds

Instructions

1. Instructions are the same as the above recipe however, replace the olive oil with the sesame oil.

2. Mix the remaining ingredients in a small bowl to create a marinade. Spread a generous amount over each fillet, making sure to cover the top of the fillet. Sprinkle with sesame seeds.

3. Seal the foil packet and cook for 30 minutes at 350F. Enjoy!
