Almond Flour Chocolate Chip Cookies Recipe

Hello Again!

Another day, another post! I thought I would change it up and post a recipe since I haven't done that in a little while. I wanted to post about a dessert recipe since I am now on a pre- wedding diet (WAH!) and I just get to look at things like this in pictures, but you all can enjoy! I have made these a couple of times and they are just as enjoyable as regular chocolate chip cookies but a little better for you! Without further ado, enjoy!

 

Almond Flour Chocolate Chip Cookies

Ingredients

  • 1/2 cup butter, softened

  • 1/4 cup coconut oil

  • 3/4 cup coconut sugar

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 cups blanched almond flour

  • 1 1/4 cups chocolate chips of choice

  • 2/3 cup toasted pecans (optional)

Instructions

  1. Preheat oven to 350 degrees. Spray a cookie sheet with non- stick spray (I personally use a coconut oil based spray).

  2. In the bowl of a stand mixer, cream together the butter, coconut oil, and brown sugar. Add the vanilla and eggs, mixing until incorporated.

  3. Mix in the baking soda and salt. Add the almond flour, 1 cup at a time, beating well after each addition. Fold in the chocolate chips and walnuts with a wooden spoon.

  4. Form the dough into balls (I use a cookie dough scooper so they are uniform) and place on the lined baking sheet about evenly. Bake for 11-13 minutes, or until golden brown around edges. Cool and enjoy! These cookies are best enjoyed the day they are baked.
