Tomato Basil Turkey Meatloaf Recipe

It feels like it's been a while since I have shared a recipe with you so I thought I would share one of my favorite Pinterest recipes with you. As with all my recipes, this one has been changed a bit as I have made it time and again and found what works for me. The original recipe link is included below if you would like to see what the original recipe was. If you enjoy meatloaf with a bit of a different flavor, then this recipe is for you. This meatloaf recipe is a bit healthier than your average meatloaf recipe and a bit more flavorful too I think. Enjoy!
Tomato Basil Turkey Meatloaf
Ingredients
1 lb. Ground Turkey
¼ C. Almond Flour
2 Tbsp. Tomato Paste
3 Tbsp. Chopped Basil
1 Egg
1 tsp. Garlic Powder
1 tsp. Salt
Topping:
2 Tbsp. Tomato Paste
¼ C. Chopped Tomatoes
1 Tbsp. Brown Sugar
1 Tbsp. Chopped Basil
Pinch of salt
Instructions
Preheat oven to 400 F. Spray a loaf pan with non- stick cooking spray.
In a bowl combine turkey, almond flour, tomato paste, chopped basil, egg, garlic powder and salt. Mix until evenly combined.
Ball up all of the meat mixture and place in a loaf pan.
In a small bowl combine tomato paste, chopped tomatoes, brown sugar, chopped basil and pinch of salt. Spoon this mixture over the meatloaf and spread evenly over the top. Bake for 30 minutes.
