Tomato Basil Soup Recipe

Time for another recipe that is a favorite of mine. I love soup but I always thought that making soup would be too hard. Think again! This tomato basil soup is not only super easy, it's very quick to make. Two of my favorite things. Since I was sick this past weekend, I thought this would be a good recipe to post about. I hope you enjoy this soup recipe as much as I do. Enjoy!
Easy Tomato Basil Soup
Ingredients
1 tsp. olive oil
1 medium onion, chopped
3 cloves of garlic, minced (i use the squeeze bottle kind)
7 C. of fresh tomatoes, chopped (i use vine ripe but you can use whatever you prefer)
1 handful of basil leaves, stalks are fine
2 tsp. salt, to taste
1 tsp. pepper, to taste
Instructions
Heat a stock pan over a medium heat and add the oil.
When hot add the onions and garlic and cook for about 1 minute. Add the chopped tomatoes.
Continue to cook over a medium heat, stirring every few minutes until the tomatoes have broken down and are soft.
Remove from the heat and add basil and salt and pepper. Blend with a hand blender until smooth with no chunks (can also be done in a regular blender but this is much more difficult). Serve immediately!
