Basic Muffin Recipe and Variations

Hello all!

I feel like I've been slacking in providing you with recipes lately so I decided to add more to my blog schedule! We're starting with a muffin recipe that's very versatile. Enjoy my recipe and my subsequent muffin adventure. Enjoy!

 

Ingredients

  • 2 cups all-purpose flour

  • 1 tbsp. baking powder

  • ½ tsp. salt

  • ½ cup granulated sugar

  • 1 cup Milk

  • 1 tsp. vanilla extract

  • 1 large egg

  • ¼ cup canola oil

  • Optional: blueberries, chocolate chips, whatever you want

Instructions

  1. Preheat oven to 400 degrees. Place muffin liners in a muffin tin or spray tin with non- stick cooking spray.

  2. In a large bowl, add the flour, baking powder, and salt. Stir to combine. In another bowl, add the sugar, milk, vanilla, egg, and oil. Whisk to combine.

  3. Add the wet ingredients to the dry ingredients. Stir until just combined; batter should be lumpy. Add desired toppings and add ins until combined (don't over mix).

  4. Fill the muffin liners 3/4 of the way up.

  5. Bake for 10-15 minutes. Let cool for 10 minutes before serving.

 

A little about my muffin adventure, it didn't go as planned and I made a HUGE mess but it was fun! I made 3 flavors: Key Lime and White Chocolate, Triple Chocolate, and Blueberry. The Key Lime flavor... missed the mark but the other two were a success! I will definitely be changing up the recipe the next time I make it but overall, this was a fun recipe to make.
